Preparation
- Stir together bulgur and 1 tablespoon oil in a heatproof bowl. Pour boiling water over, then cover bowl tightly with plastic wrap and let stand 15 minutes. Drain in a sieve, pressing on bulgur to remove any excess liquid.
- Transfer bulgur to a bowl and toss with remaining ingredients, including 2 tablespoons oil, until combined well.

Procedures
Preheat the oven to 180C/350F/gas 4.
On a chopping board, cut the aubergines in half lengthways.
Score the flesh sides in a crisscross pattern, making sure you don’t cut through the skins.
Drizzle with 2 tablespoons olive oil, then toss to coat.
Arrange on a baking tray, flesh-side facing up, then bake in the oven for around 45 minutes, or until soft.
Using oven gloves, remove the aubergine from the oven, then leave aside to cool.
Peel and roughly chop the garlic, then place in a food processor.
Add the tahini, 2 tablespoons extra virgin olive oil and the aubergine, discarding the skin.
Cut the lemons in half. Squeeze in the juice, using your fingers to catch any pips.
Have a taste and add a tiny pinch of salt and pepper, if you think you think it needs it.
Recommend to serve cold with hot flatbread ,,, dont forget to share with your family & friends .

This Chicken Shawarma recipe is going to knock your heart ! Just a handful of every day spices makes an incredible Chicken Shawarma marinade that infuses the chicken with exotic Middle Eastern flavours.

Preparation
- Put the chicken thighs in a large food bag or bowl and season well. Whisk the lemon juice and oil together then add the garlic, spices and bay leaves. Mix thoroughly and pour over the chicken, rubbing in using your hands. If you prefer to keep your hands clean and you are using a bag, seal it first, then massage from the outside.
- Leave to marinade in the fridge, covered for at least 2 hours, but preferably overnight. Allow the chicken to come to room temperature before cooking.
- To cook the chicken, heat a grill or griddle pan and scrape off any excess marinade from the chicken. Over a medium heat, grill or griddle the chicken, turning frequently, for around 20-25 minutes, or until cooked through. Remove from the barbecue and leave to rest for a few minutes, before slicing up and serving .
Shawarma usually served as a sandwich with Saj or white bread with pickled cucumber & special souce.
